Healthy Indian Tri-Color Recipes to Try This 15th August

1. Tricolor Millet Idli Platter

  • Take 1 cup of overnight-soaked foxtail millet, ½ cup of overnight-soaked black gram, and 1 teaspoon of soaked fenugreek seeds. Put them all in the mixer grinder jar and add ¾ cup of water (You can use the water in which you soaked the foxtail millet). 

  • Grind it till it smoothens well and empty the mixer jar into a bowl and cover the batter with a lid, and let it set in a warm place for 6 to 8 hours. 

  • Till then, prepare green coconut chutney and orange tomato chutney for the platter. 

  • Now, once your batter is set, add salt to it according to your taste and mix it well! 

  • Put the steam cooker on the gas and let the water start boiling. Take the idli pan, and grease it with minimal oil, pour the batter into each compartment, and then put the pan in the steam cooker. 

  • Let it cook for 5 to 10 minutes and check if the idli is cooked by poking a toothpick in it. If the toothpick comes out clean, your millet idli is cooked, and if the batter sticks to the toothpick, it means idli still needs some more time to get cooked!       

2. Independence Day Millet Salad Bowl

  • Take a cup of barnyard millet and rinse it well, and boil with 1½ cups water and a pinch of salt. Cover it with a lid and simmer for 10 to 12 minutes until soft and fluffy.

  • Once cooked, let it cool.

  • Now, in a pan, take olive oil and heat it, and toss in the bell peppers. Now add the soaked saffron with its water, saute for 3 to 4 minutes until just tender. Season the mixture with salt and black pepper.

  • Heat ghee/oil in a pan, lightly sauté paneer cubes with cumin powder and salt for 2–3 minutes until golden at the edges. 

  • Now blend all green mint chutney ingredients into a smooth, thick paste. Adjust salt and lemon as per taste.

  • In a shallow bowl or plate, layer:

Bottom: Fluffy millet

One side: Saffron-roasted peppers

Center: Paneer cubes 

Other side: Drizzle of mint chutney or serve on the side

And your Festive millet meal is ready!
