Ingredients:


  • 250gms Tinda (Apple Gourd)
  • ½ cup finely chopped onion
  • ½ cup finely chopped tomato
  • ½ tsp ginger
  • ¾ cup water
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp turmeric
  • ½ tsp cumin powder
  • ½ tsp amchur
  • 1 tsp mustard oil
  • 1 tsp cumin seeds

Preparation:


Use a wok and heat the mustard oil till smoking point. Lower the flame to medium-high, add 1 tsp cumin seeds and stir fry until you notice a changed color. Now, add two pinches of asafoetida and mix well. Next, add the onions, stir until translucent, and add ginger-garlic paste. Now, add the finely chopped tomatoes and stir-fry until it softens. Add the masala powders and mix well. Once the mixture is blended well, add tinda and mix well. Add water and cook over medium heat until tinda is translucent. Garnish with coriander leaves and serve hot with phulkas or rotis. 

Bharwa tinda
  • Bharwa tinda:

Bharwa tinda is a mouth-watering onion-tomato-based gravy. This common family recipe is easy to cook and serve. This simple yet delicious dish is loved by all age groups. The flavor of spices and the soft tinda makes it a perfect companion for rotis and parathas. 


Ingredients:


  • 500 gms tinda
  • 1 large size finely chopped onion
  • 3 medium size tomatoes
  • 4 cloves of medium-sized garlic
  • ½ inch ginger
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp dry mango powder
  • 1 pinch asafoetida
  • 3 - 4 tsp oil
  • 2 - 3 tsp chopped coriander leaves 

Preparation:


Add ½ cup of onion, 1 - 1.25 cups chopped tomatoes, and 4 medium cloves garlic in a blender and grind to fine paste. Next, peel the outer green skin of the tinda and make a cross-section slice without cutting it entirely. Now take the blended onion-tomato paste in a bowl and add turmeric powder, red chili powder, coriander powder, cumin powder, dry mango powder, asafoetida, and salt. Mix the ground paste well and stuff in tinda. 


Heat four tablespoons of oil in a pressure cooker and add the remaining masala paste. Saute for 2 minutes on low to medium flame. Now, place the stuffed tinda in the cooker gently. Pressure cook for 2 to 3 whistles. Once cooled down, open the lid and cook until the water evaporates. Garnish with coriander leaves. The Bharwa tinda recipe will have medium consistent gravy which can be served with chapatis, phulka, or parathas.

Preparation:


To make sukhka tinda ki sabzi, heat the coconut oil and add cumin seeds. When the cumin seeds crackle, add chopped tinda, turmeric powder, salt, and water and mix well. Cover with a lid and cook the mixture for 10 minutes on medium to low flame while stirring occasionally. Add the chilli powder, dried mango powder, and salt and mix well. Cook well for another 4 minutes on medium flame. Garnish with coriander leaves and serve with chapati or parathas.
